Instructions
In a pot, heat 1 tbsp olive oil over medium heat and sauté the diced onion, carrots, and celery until softened (about 5–7 minutes).
Add the diced potatoes and the reconstituted beef bone broth (4 cups). Bring to a simmer.
Season with salt, black pepper, and chopped parsley. Simmer for 20 minutes until potatoes are tender.
