1lbhalal beef chuck, cubed
1/2cupbarley
1carrot, chopped
1onion, chopped
1celery stalk, chopped
1tspapple cider vinegar
2bay leaves

Instructions
Heat 1 tbsp oil in a Dutch oven over medium-high heat. Brown the cubed beef for 5–7 minutes.
Add chopped onion, carrot, and celery; cook until softened (about 5 minutes).
Stir in barley, reconstituted broth, apple cider vinegar, and bay leaves. Bring to a simmer.
Cover and simmer for 1½ hours until beef and barley are tender. Remove bay leaves before serving.
