Main Ingredients

  • 2 lbs potatoes, peeled and cubed
  • 1/2 onion, diced
  • 2 tbsp butter
  • black pepper, to taste
  • 1 tbsp chopped parsley

Instructions

  • Boil potatoes in salted water until soft (15 minutes); drain.
  • In a small pan, sauté diced onion in 2 tbsp butter until caramelized (5 minutes).
  • Mash potatoes with warm reconstituted broth and onion-butter mixture. Season with black pepper and parsley.
