Instructions
Heat 1 tbsp oil in a pot over medium heat. Sauté chopped onion, carrot, and celery for 5 minutes.
Add green lentils, reconstituted broth, and apple cider vinegar. Bring to a simmer.
Cook for 30–40 minutes until lentils are soft. Garnish with parsley and serve warm.
